Roasted Chickpeas

I love to snack.  All the freakin time.  Pretty much any time my mouth isn’t moving from insesant blathering about something wack-tastic and insignificant in the grand scheme of things, it’s munching on something.  I’m painting such a lovely picture of myself, aren’t I?

So, since I don’t feel like being the size of a duplex, I need to reach for the healthier stuff.  Lucky for me, I tend to love fruit, cereal, and yogurt; unluckily for me, I also love chocolate, peanut butter, nuts, pizza, chicken wings, cheese, cake, and crackers.  So, I try to find new, interesting snacks that are small and easy to pick at, that don’t pack on the lbs.

One of my favorite go-tos that is a total sinch to whip up are roasted chickpeas.  They are crazy healthy, crunchy, satisfying because they are loaded with fiber, natural, wholesome, savory, and salty.  I make these all the time and play around with spices, and never get sick of them.  Below is my favorite, simple variety.  Enjoy!


 

Materials:

  • oven-safe baking dish or cookie sheet
  • cooking spray
  • paper towels or towel

Ingredients:

  • 1 can chickpeas, drained
  • olive oil (or you can stick to just using cooking spray)
  • kosher salt or sea salt
  • chili powder to taste

Directions:

  1. Preheat oven to broil (or at least 400 degrees).
  2. Pat dry chick peas using paper towels or a clean dish towel.FullSizeRender (3)
  3. Spray a baking dish or cookie sheet with non-stick spray.  Place chick peas in dish, and lightly coat evenly with oil/spray. FullSizeRender (2)
  4. Sprinkle with salt and chili powder. IMG_2787
  5. Bake for about 10-15 minutes, or until crisp and just starting to turn light brown.  Check often after about 8 minutes, as every oven is different!  FullSizeRender (1)
