Lightened up Broccoli Salad

Oh man, I don’t think I’ve ever been as lazy as I was this past week.  It was cold, rainy, and miserable out pretty much the entire week, which in my book is perfect weather for binge-watching anything on Netflix and slowly wasting away on the couch.  I could not will myself to do anything productive beyond the absolutely necessary.  The daily debate between going to the gym or post-work coziness wasn’t even a struggle.  I was pathetic.  It really hurt when I had a race Saturday, and had the worst time I’ve ever run.  

Eh, what are ya gonna do?  I didn’t feel like doing. anything. period.  I don’t usually get like that, but I know that a ton of us are just plain spent at the end of the day.  And around this time when we are surrounded by an abundance of chocolates and holiday goodies, we need easy, healthy go-tos ready to prep in just a few minutes.  So, I made this for dinner Friday (I meant it as a side dish and proudly ate the entire bowl in one episode of Law and Order: SVU) that was colorful, super flavorful, light but satisfying:  a healthy version of a broccoli salad.

Broc salad is one of my favorites, but is a potential calorie bomb:  my family’s recipe is loaded with ranch dressing, mayo, bacon, and cheddar cheese (my mouth is watering just thinking of it). It’s delicious, but easy to knock you off track.  So, I took the same components (dressing, protein, cheese) and ran with it, based on what was in my kitchen.  It was delicious.  I can’t wait to make it again.

Oh, and did I mention it took me a whopping 5 minutes to make?

Materials:

  • large mixing bowl
  • cutting board and knife
  • measuring cups and spoons

Ingredients:

  • 1 large broccoli crown
  • 15 slices turkey pepperoni, or 1 link chicken sausage, cut into small pieces
  • 1/2 c craisins
  • 1/4 c crumbled feta cheese
  • about 2 T honey mustard dressing (I use a yogurt-based dressing from Boathouse Farms)

Directions:

  1. Chop broccoli into very small pieces (about the size of your fingernail). IMG_2999
  2. Combine all ingredients except dressing into a bowl.
