Italian Turkey Meatballs

How awesome was the Green Bay/Seahawks game on Sunday?!  I am not a personal fan of either team, but I always appreciate an entertaining game.  What a show that was!  A strangely large proportion of my friends here in Boston are Packers fans, so they are none to happy this weekend.  Don’t worry, Pats fans, I’ll get to you.

Regardless of your team playing in the Superbowl or not, you’re going to watch at least a little bit of it, right?  Did you know that is the single most watched televised event every year?  More than all of the award shows, more than the State of the Union Address, perhaps more than the season premiere of Scandal next week.  Why do we love it so much?  That’s easy:  we love to be a part of the conversation surrounding the Superbowl.  The insane commercials, the always horrific half-time shows (sorry, Katy P), the hope that something disasterous will go down that we can talk about the next day around the coffee maker, because, let’s face it, that’s pretty much the highlight of our dismal winters.

Well, that and the season premiere of Scandal next week.

So, I am bringing you a few of my go-tos that I serve for my buddies at our Superbowl gatherings.  Definitely check out the other Game Day Treats on the site for yummy football-watching goodness, but today, I am starting with one of two meatball recipes I made for the weekend:  italian turkey meatballs.  Very simple, very easy, very crowd-pleasing.  Serve with some warm marinara sauce for dipping.  Enjoy!


Materials:

  •  large mixing bowl
  • measuring cups and spoons
  • cooking spray
  • baking sheet
  • aluminum foil

Ingredients:

  • 1.3 lb-package ground turkey (93% lean)
  • 1-2 T minced garlic
  • 1 egg, beaten
  • 1/2 c panko breadcrumbs
  • 1/2 c Parmesan cheese, plus more for sprinkling
  • 2 tsp oregano
  • 1 tsp parsley
  • salt and pepper to taste

Directions:

  1. Preheat oven to 375 degrees. Line your backing sheet with aluminum foil, and spray baking sheet with cooking spray.
  2. In a large bowl, combine all ingredients.IMG_3491
  3. Mix with your hand until just combined. (Do not over mix.)IMG_3492
  4. Using a tablespoon to help measure, create your meatballs and place on your baking sheet.FullSizeRender
  5. Sprinkle Parmesan cheese over meatballs.FullSizeRender_1
  6. Bake meatballs for about 15-18 minutes, or until cooked through.FullSizeRender_3
  7. Serve with warm marinara for dipping.  Enjoy!
