Peanut Butter Cup Brownie Bites

When life gives you lemons, ask who planted the lemon tree. Did you?

What I mean by that is this: okay, maybe things didn’t go the way you planned, but who put that plan in motion? I’m not asking to make you feel bad about yourself, I’m just trying to give you some perspective. It seems as though we have become a society of finger pointers– so quick to place blame, judge, get angry at those who don’t deserve it (at least not entirely). Plus, taking control admitting your part in something less than perfect that you’re experiencing is empowering. Think about it:  if everything is someone else’s fault, then outside forces are running your life. Not you. Sometimes, you need to step back and realize that maybe it was your bad somewhat, and have a sense of humor about it.


Example:  this week, I wanted to make my classic heart-shapes peanut butter cups for my new work pals, to celebrate Valentine’s Day. I used to make these every year until I moved to Boston, and was so excited that I could make them again!  But…FullSizeRender            FullSizeRenderFail.  Epic fail.
I tried to make a healthier version, using my new favorite dry peanut butter, and although they tasted good, they were hideous, and couldn’t hold a shape. No hearts.
I was so irritated. All that time and work and money. What a waste. I was going to throw the beasts away, but decided to sit in the shade of my lemon tree that I planted.  And I made a new recipe: pb cup brownie bites, in the shape of hearts. And you know what?  Not too shabby.  I brought them to work, and they still made my coworkers smile.  Mission accomplished.  

So, with the spirit of love today, show yourself some.  Turn your attitude around on a bad situation, and make the most of it.  And making a mess in the kitchen always puts me in a better mood 🙂

Materials:

  • two mixing bowls
  • cutting board and knife
  • spatula
  • hand mixer
  • aluminum foil
  • cookie sheet
  • small, heart-shaped cookie cutter (optional)
  • measuring cups and spoons

Ingredients:

  • 2 c flour
  • 1/4 c cocoa
  • 1/2 tsp baking soda
  • pinch of salt
  • 1/2 c butter, softened ( I used Smart Balance)
  • 1/2 c brown sugar
  • 1/2 c white sugar
  • 1 egg
  • 1 T vanilla
  • 3 packages regular-sized peanut-butter cups (or equivalent), partially frozen

Directions:

  1. Preheat oven to 370 degrees.  Line cookie sheet with aluminum foil and spray.
  2. Mix the flour, baking soda, cocoa,  and salt in one bowl until just combined.  Set aside.FullSizeRender
  3. Using your hand mixer, beat butter and sugars together until creamy in your second bowl.
  4. Slowly add flour mixture to butter mixture, scraping sides down in between batches.  IMG_3813
  5. Add egg and vanilla, and beat until just combined.  Note:  your batter will be very sticky!FullSizeRender
  6. Chop peanut butter cups into small chunks (they do not need to be even!).  It helps if they are partially frozen!FullSizeRenderFullSizeRender
  7. Gently stir in peanut butter cups using your spatula.  IMG_3820FullSizeRender
  8. Working in small batches, flatten batter onto a surface, and cut out heart-shapes using your cookie cutter.  IMG_3822
  9. Place each cut-out on your greased cookie sheet.FullSizeRenderFullSizeRender
  10. Bake for about 6 minutes, or until just set.  You want to take them out before they start to crisp!FullSizeRender
