Black and Blue Detox Salad

The weekends are usually when we take our cheat days, right? We are good all week, stay on track, stick to our regimens. We deserve to treat ourselves; it seems more and more folks are loving the 80/20 diet.  (For those who are not familiar, the 80/20 diet is simple:  80% of the time you eat clean, and 20% of the time you cheat.)
My problem with this lifestyle is that I will eat right during the week… I will even take note of all my caloric intake Sunday night through Friday morning. But then, in that tiny weekend window, I will often consume more than the rest of the week combined. I’m not sure if that’s the point of the 80:20 split. I think I’m doing it wrong. Eh, you only live once, right?
Anyway, every Sunday I feel less than awesome, and need to jumpstart my system. I tend to load up on fresh fruit, salad, and make sure I get some healthy protein. My new favorite is a superfood allstar-loving salad, that l like to call the Black and Blue Detox salad. Although the name comes from the superfoods that star in it, black beans and blueberries, it’s sure to give your mind and body the ole 1-2 punch it needs to get back to your highly-functioning Monday self. And although it’s really tempting, the best thing you can do for yourself with this salad is to stick to a simple vinaigrette (my recipe is below) and not pile on the fructose and fat-infested (albeit delicious) dressing. Your bod will thank you.

Materials:

  • large bowl
  • measuring cup and spoons
  • small bowl  or cup

Ingredients:

  • 1 c greens, washed and ready to eat (any kind you like)
  • 1/3 c blueberries, washed
  • 2 T black beans, drained and pat dry
  • 2 T crushed or slivered almonds
  • 1/2 c sliced tomatoes (optional)
  • 2 tsp balsamic vinegar
  • 1 1/2 T olive oil
  • pinch black pepper
  • pinch lemon juice (optional)

Directions:

  1. Place all greens, berries, beans, almonds, and tomatoes in a large bowl.     FullSizeRender
