3-Ingredient 5-Minute Sautéed Spinach

That’s a mouthful.  A delicious, nutritious mouthful.  Don’t you love when those two coincide?  Isn’t it even better when you add mad-easy to the mix?  How could you NOT try this?

Full disclosure, I made this because I am officially an 85-year-old lady.  I was thinking about this today, how much I’ve turned into an elderly woman with my ways.  We both live alone and need things done “our way.  We complain to our aging cat about how when we were growing up, people used to talk to each other, face to face.  We both broke the handles off our brooms banging on the floor/ceiling of our neighbor’s because their music, regardless of the time, was much too loud.

And the food.

When you’re teeth hurt constantly and you can’t chew anything solid (thanks, Invisalign!), all you think about are soft foods.  I was grocery shopping this week, and all I could think about was what I could cook this week that I didn’t need to chew.  Much like my inner Grace (that’s my old lady name), I wanted something soft, flavorful, and filling.  Thinking back to the good ole days, I remembered how much I LOVED spinach growing up, and suddenly had a hankering for it.  It’s warm, comforting, and cooks in just a couple of minutes.  Done.

Putting a new spin on it, I wanted to use up the last of my sun-dried tomatoes (get the ones in oil… amazing!) and of course, some cheese.  Mediterranean-inspired dinner, in 5 minutes flat.  Enjoy!


Materials:

  • large pan with lid
  • tongs (or spatula)
  • cooking oil

Ingredients:

  • spinach
  • sun-dried tomatoes (or regular tomatoes)
  • feta or Parmesan cheese, to taste
  • optional:  salt and pepper to taste, squeeze of lemon

Directions:

  1. Heat oil over medium heat.
  2. Add spinach (it’s okay to over crowd, it cooks WAY down) and a splash of water to the pan.FullSizeRender
  3. Place lid on and cook for about 2 minutes, until tender and wilted.
  4. Toss around once with tongs.  FullSizeRender
