Super Simple Salmon

I have a confession to make, and I hope it won’t cost me my (few) readers who are health fanatics:  I have been to the gym twice in the past month.  Yup.  I used to go every day, sometimes twice.  I would plan my vacations around which hotels had decent fitness rooms.  I was diligent, for years.  Now that I have a heavy work load, mixed with the excuse of crappy weather, I have been riding my couch like nobody’s business.

And you know what?  I have LOST SIX POUNDS SINCE FEBRUARY.  Sure, some of it is muscle mass (not that I had much to begin with, but it was there, and fat has definitely taken its place), but you know what it’s due to?  The dreaded portion control.  My nemesis.  My kryptonite.  Also, unfortunately the only way I lose weight.  My doctor told me several years ago that, for women, 75% to 80% of their weight loss is due to their diet, not their exercise, and that number climbs with age; for guys it tends to be the reverse.  Lucky ducks.. I would soooo rather gorge myself and then work it off than starve to lose an ounce or two.

As someone who is obsessed with food (so obsessed that my hobby is writing about eating and cooking), it is a harsh reality that cutting down the amount of goodies I shovel in is the only way I can fit into my clothes; but, as someone who has struggled with her weight her whole life, I’ve learned to live with it.  That’s why I spend so much time looking for insanely delicious food that just so happens to be healthy, low calorie, high protein, and crowd-pleasing.  Like this salmon.  I could eat it e’ry day.  So good, so easy.  I used frozen filets (way cheaper) and high heat (necessary or else they stick and make a mess).  Best part?  I made them on a rainy, cold day in my apartment.  I didn’t need to wait for grilling season!  Pair it with a caesar salad and some brown rice, and you got yourself one hellagood weekday meal.  Enjoy!


Materials:

  • large pan with lid
  • tongs (or spatula)
  • cooking oil

Ingredients:

  • 2 salmon filets (thawed, if frozen)
  • 1-T minced garlic
  • 1-T lemon juice
  • salt and pepper to taste

Directions:

  1. Heat oil over high heat.
  2. Place salmon, skin down, into pan and place lid on.  FullSizeRender
  3. Allow to cook for about 5 minutes, or until the sides begin to show a little white at the bottom.FullSizeRender
  4. Add garlic, salt, and pepper.
  5. Gently flip onto skin side, and continue to cook for an extra 5-7 minutes, until cooked through (light pink and white).FullSizeRenderFullSizeRender
  6. Flip back over onto skin. FullSizeRender Spritz lemon on before serving.  Enjoy!image1
