Cucumber-Avocado Salad

I am well into my 30 Days of Deeds project, and am really loving the challenge, and the way it has changed my general attitude!  I especially need it this month, since this is such a crazy month for me work-wise.  I am working a ton of hours, not exercising (when you’re averaging a 12-hour work day, you really don’t feel like trying to squeeze in a Spin class), and not sleeping nearly as much as I should…. so you can imagine that my general demeanor is pretty lousy.  I am probably the least pleasant person to be around, and I know plenty of miserable people.  So, as much as it stretches me, the Deeds project ended up being a blessing for me more than those I am trying to help!

If you’re interested, I am writing them down everyday, and plan to post them later this month.  Today’s deed:  PATIENCE.  Lord knows I need a ton of this e’eryday, but now more than ever.  When I am at a H.A.L.T. (Hungry, Angry, Lonely, Tired), I tend to be pretty short with people (who isn’t, emirite?), and get pretty irritable and sarcastic.  Today, at my wit’s end, I pledge to channel my yoga breathing, count to 5, remind myself that everyone, especially me, makes mistakes, and smile.  And remember that the BEST SALAD I EVER FREAKIN HAD is waiting for me at home.

Yes folks.  This is one for the books.

Insanely easy.  Cheap to make.  Waist-friendly.  You’re welcome.  Namaste.  🙂


Materials:

  • large bowl
  • spatula or spoon
  • cutting board and knife
  • peeler

Ingredients:

  • 1 large cucumber, slightly peeled and cubed
  • 1 avocado, peeled and cubed
  • 1 large tomato, cubed
  • 1 handful cilantro leaves, chopped (or about 1 T dried)
  • 1 tsp garlic
  • 2 T lime juice
  • 2 tsp olive oil
  • salt and pepper to taste

Directions:

  1. Toss all ingredients in a bowl.  
  2. Carefully mix, so you don’t squish or bruise the avocado.IMG_4659
