Buffalo Cauliflower Bites

So I may or may not have mentioned that I am a Dallas Cowboys fan.

Okay, how many of you did I just lose by that statement?

It’s the truth though–I have been since Nam.  Not going to change, regardless of my location.  So you can imagine how I am feeling right now going into Week 3 with Romo’s busted collar bone.  Oh well, winning was fun for a while.  #bringbackAikman

Anyway, on to food!

I was never the kid who ate her veggies unless they were slathered with cheese, sauce, or dip.  And by was, I definitely mean I still am.  If you see me eating a raw, naked piece of crudite, you know to comfort me because I’ve just received terrible news of some kind.  That, or I’m responding to a dare.So, OF COURSE I am going to make this for a Game Day food.  I will put buffalo wing sauce on, well, pretty much anything- salads, popcorn, eggs- so this was a no brainer.  I always get excited when I can find low-cal alternatives to my favorites, especially ones that use hot sauce.  Maybe I’ll actually have a shot at fitting into one of my Halloween costumes this year 🙂

Too small? Too fabulous.

Materials:

  • cutting board with knife
  • baking sheet/pan
  • tongs or spatula
  • measuring cup
  • spoon
  • cooking spray

Ingredients:

  • 1 head of cauliflower
  • 1/2 c hot sauce (I used Frank’s Wing sauce)
  • 2 T butter (I used Smart Balance)
  • salt and pepper to taste
  • dressing of choice

Directions:

  1. Preheat oven to 400 degrees.  Lightly spray your baking sheet with cooking spray.
  2. Cut cauliflower into bite-size pieces.  Place cauliflower onto baking sheet.  Sprinkle with salt and pepper.     FullSizeRender (6)
  3. Bake for about 15 minutes, until tender and starting to brown.IMG_5839
  4. Mix hot sauce and butter in a measuring cup.  Heat in the microwave for about 15 seconds.
  5. Pour hot sauce mixture over cauliflower.  Use a spoon to gently toss and evenly coat.IMG_5842
  6. Bake for about 5-7 more minutes.
  7. Serve with blue cheese or ranch dressing.FullSizeRender (5)
