Secret Ingredient Chocolate Truffles

So, womp womp.  Jenni dropped the ball.  Again.  I have had such a whirl-wind of a month that I completely forgot to talk about what this month’s 30 Days project, and I am really happy about this one!  Between traveling to see my awesome family in Tennessee and multiple weddings (’tis the season!), it’s been on the back of my mind but hasn’t made it any farther than that.

So, without further delay, I have decided to not complain for 30 days.  I can’t handle perpetually negative people, and felt like I was slowly becoming one of them, so I decided to give this a go.  Now, let me clarify:  I am not outwardly complaining.  However, I can already feel my attitude toward others, my work, my family, my cat, traffic, and even my insomnia get much better.

It’s not easy though, that’s for sure.  Example:  I made these delicious chocolate truffles that are creamy, rich, and healthy and brought them to work for some of my coworkers.  The truffles were a hit, giving rave reviews… except that I saw one person who decided to leave all manners at home throw out the truffle in front of me.  Without even trying it.  It was really, really difficult to not complain on this person’s absurd rude behavior, but I shrugged it off.  And ate three more truffles.

Don’t be rude.  Try these.  They taste sinful, but are actually good for you!  Wins for e’rybody.


Materials:

  • spoon
  • food processor or blender

Ingredients:

  • 1 avocado, peeled and diced
  • 1 T powdered sugar
  • 1/4 c cocoa powder, plus more for rolling

Directions:

  1. Blend avocado until creamy.image3
  2. Place rest of ingredients in food processor.image2
  3. Blend until well mixed.image1
  4. Place extra cocoa powder on a small plate for coating truffles.
  5. Roll spoon-ful sized truffles in cocoa powder, and set aside.FullSizeRender
