Quinoa Bowl with Goat Cheese and Avocado

IT’S HERE.  THIRTY.  3-0.

the jury is still out on how I feel about leaving my 20’s, but I’m working overtime to stay positive.  Anyway, on my birthday last year, I unveiled the list I created several years ago entitled, “To Do by 30!”  Let’s take a gander once more:

Still hanging in my living room as a mockery.

  • Go skydiving –> not done.  UPDATE!  My friend GAVE ME A GIFT CERT TO GO!
  • travel to at least 1 other country –> not done.  I really need to get on this.  UPDATE:  I WENT TO MEXICO!
  • go to an NFL game –> went to the December game! Ugh so miserably cold.
  • start writing something people will actually read –> you’re reading it now!
  • host a holiday meal –> this past Easter.  Big success!
  • keep a plant alive for at least one month –> I have an orchid that is going strong for two months now.  UPDATE:  Orchid died as soon as I typed that sentence. 
  • visit family in TN –> fail.
  • learn how to use knives properly–> I took a class on this about a month ago.  So fun!
  • learn Spanish–> currently enrolled!  UPDATE:  I stopped going.  Womp Womp.  
  • open mic–> no one should be subjected to my singing.  This one is just cruel.
  • karaoke.  Tell no one.–> HAHAHAHA I HAVE done this.  It was awful.
  • learn to ski –> not done.  I really don’t see the point in skiing.  This is for another post. 
  • go to an aquarium–> not done.  I live within walking distance to NE Aquarium.  I am ashamed.  UPDATE!  Went, loved it.  
  • see giraffes in person–> done, and one of the most magical days ever.
  • go back to birthplace–> not done.  Who talks like this… “birth place?”  Was I on something when I wrote this?
  • get the HELL out of Syracuse, for good–> thank GOD I did.  Sorry friends back home.
  • go skydiving–> still not done, like I said at the top of this list.  Why it’s on twice I can’t tell you.
  • organize music–> not done.  Probably never will be.

So, I’d say I knocked out like half of those.  50% isn’t bad, right?  Well, technically, it would be an F, so yeah, I failed epically, but whatever.  That list was pretty ridiculous.
In light of my three categories,  I have new priorities anyway.  That list was full of fun things, and it’s wonderful to have goals, but I am striving for ways to enrich my life.  So, without further delay (I know you’re on the edge of your seat), here’s my new list.  I’m not giving myself a time limit (yet) on these:

  • make time for my health (working out, sleeping more, relaxing)
  • striving to contribute to the community more
  • staying positive
  • focus on career and family planning goals
  • speak to distant family and friends more often
  • travel more
  • go sky diving.  Keeping it, and now I have a gift certificate, so I have to go, right?

Now, time for my birthday food! One of my absolute, hands down, makes my whole body smile foods is goat cheese.  However, I don’t usually buy it for two reasons: no one else likes it, and I will mow that stuff if it’s anywhere in reach. #noselfcontrol.
So, like my ingredients last year, I’m rockin some goat cheese, avocado, and tomatoes, but instead of a sammie, I’m going with quinoa and a fried egg. You see these new trends of putting a fried egg on everything, and this has been on my to-do list since Nam. Well, in the spirit of “saying yes more,” I’m jumping on that wagon and strapping in. Join me in my celebration and food-mash-up sensation! Enjoy:)


Materials:

  • cutting board
  • knife
  • pot with lid
  • small frying pan
  • spatula
  • bowl

Ingredients:

  • quinoa (cook according to package instructions)
  • 1/2 avocado
  • cherry tomatoes
  • goat cheese
  • 1 egg

Directions:

  1. While quinoa is boiling, heat a small frying pan over high heat.
  2. Carefully add egg.  Allow to cook undisturbed for about 3 minutes, or until edges crisp.FullSizeRender
  3. Using a spatula, carefully flip the egg.  Cook for an additional minute.
  4. Place quinoa, avocado, cheese, and tomatoes in a bowl.FullSizeRender
  5. Carefully slide egg on top.FullSizeRender
  6. Enjoy!
