I mean, I should just give up.

Actually, I have thought about giving up blogging several times.  It takes a lot, A LOT, of time, energy, planning… all things that I have very little of.  And I don’t like to do things half-way; if I’m not automatically great at something, I like to quit while I’m ahead.  Or behind.

At any rate, I really don’t want to quit. I’d rather give excuses. I have a few good ones for my major blogging deficiencies that have been eating all of my time:

  • I’ve been taking a dance class,
  • I’ve been traveling for work,
  • I started tutoring at this AMAZING volunteer after-school program, and
  • I. MOVED. AGAIN.

Avocado-Cucumber-Feta Salad

Here’s a fun late-night realization:  my refrigerator stopped working yesterday.  You know, the 85-degree day that I just so happened to buy groceries?  Yeah, that day.  That’s never happened to me before, but I’ve also never lived in a place where the (only) kitchen appliance is older than my grandmother.  Before your comforting words of don’t worry!  You’re a tenant!  That’s the landlord’s job to provide you with a working fridge… at least you’re not a home-owner yet! Corny chuckle corny chuckle corny chuckle, oh, let us not forget what we are dealing with in my building.

See, I have a “band-aid” landlord:  they (it’s an office full of them) will pull out the masking tape, deodorizing sprays, paint, and tub caulk before EVER genuinely fixing or replacing anything if it can be avoided.  Hey, they are starving landlords in Boston.. they are only collecting a measly 60k per month from my building alone, give them a break, will ya?

After my work order request, email, and phone call, I was told to “try a defrost and see what happens,” so I have a feeling my meals are going to be interesting this week.  Since I just bought groceries and wanted to salvage what I could (although the meat was a goner), I decided to make the most of it, and make a new dish off the old Pinterest page.  Insanely easy, really healthy, and honestly one of the tastiest things I’ve ever eaten.  Just writing this is making me drool.  Truth.  I want more of this so badly I almost drove out to the store immediately for more avocados.  Enjoy 🙂

Materials:

  • cutting board
  • knife
  • bowl

Ingredients:

  • 1 cucumber, cubed
  • 1/2 avocado, peeled and cubed
  • 1/3c feta, crumbled
  • 2 T lime juice (or lemon juice)
  • 2 tsp dill
  • salt and pepper to taste

Directions:

  1. Combine cucumber, avocado, and feta in a large bowl.  It’s okay if the avocado gets a bit smashed in the process.  FullSizeRender
